
Brooklyn beer joint Beer Table (427B 7th Ave., at 15th St., Park Slope) has always been a supporter of Brian Strumke’s gypsy brewery, Stillwater Artisanal. So a natural next step in their relationship is what’s happened next: Beer Table owner Justin Phillips partnered with the brewery for the first of a series of beers to be brewed in collaboration with the restaurant called Table Beer.
But this is just the first of a series of beers coordinated by Phillips. The concept, he says, was to acknowledge the creative and artistic concept of creating a consumable - in this case, beer, obviously - and challenge brewers to brew a beer that would “challenge their ideas about decision-making, consumption, and mortality.”
Perhaps more succinctly, Phillips asked and explained the question that summarizes the project:
“What beer would I brew for myself to drink every day for the rest of my life?”
Each of the brewers asked to participate in this project has been asked to brew a “Table Beer” that they feel they can fully explain and understand for themselves. I’ve asked them to make a regular commitment to its production, and for it to be produced on a relatively large scale. The only parameters are that it should be fairly inexpensive, it should be made with eating in mind, it should be replicable, and the provenance of its ingredients should be known.
The first entry - from Brian Strumke of Stillwater - is a crisp, dry beer brewed with Belgian yeast, featuring the funky aroma of Brettanomyces yeast and the piney aroma of a generous hop addition. The goal is balance, and at 4.7%, the description itself seems in balance.
Table Beer will be released tonight at 5pm at Beer Table (427B 7th Ave., at 15th St., Park Slope). They’ll have the beer both in bottles and on draft, along with complementary oysters while they last.
In addition, on Tuesday, March 20th, Blue Ribbon Bakery Kitchen (33 Downing St., at Bedford St., West Village) is hosting a five-course dinner paired with Table Beer to celebrate its release. The meal is $85, all-inclusive, and reservations can be made here.
